HELP! I have all this yellow squash. . . now what do I do with it????

My friend Jenny gave me a yellow squash plant earlier this year. I have never used yellow squash in my cooking before, but we are new to the gardening hobby and were excited to plant anything that had even the most remote possibility of growing.

And this certainly did!!!

The one little plant has pretty much taken over our garden and we now have an abundance of yellow squash. So . . .

HELP!!!!

What do we do with it now?? Any one out there have some good suggestions or recipes?? If so please let me know or email them to joy4yourjrney@gmail.com

Sauteed with butter.

Battered and fried.

Shreaded in quick bread (Like banana.)

Slice thin and alternate with tomato in a baking dish. Top with bacon, fresh basil and cheese. Bake until soft. YUM!

Blended into pancakes.

Um, I could go on. But this should get you started.

What Carolyn said.
Saute it with sliced onions, butter, salt and pepper. My favorite way!

Also, shred it and put it in spaghetti sauce!

You can slice, grate, or puree it and freeze it for later use. The slices may not be great sauteed later, but they'd be fine in soups or casseroles. I add the puree to sauces, soups, and casseroles and the kids get a veggie and I don't have to listen to any complaints. Good Luck! The squash bugs are winning the war for my zucchini and pumpkins, so I'm glad someone out there is having success!

I vote for Sauteed in butter! It was one of my fav. as a kid.

I sautee sliced squash, fresh garlic and whatever other veggies you have on hand in a little bit of olive oil, sprinkle the pan with salt and pepper when the veggies are tender toss them with your favortie cooked pasta noodles and sprinkle with parmesaen cheese. Yum :) Also in the lion house cook book there is a recipe for zucchini chocolate bread- I'm sure you could substitute yellow squash

We do love the crook-neck or summer squash fried in butter though! YUM!

Just throw it away. We all know the only vegetables worth eating are corn and potatoes. ;)

I just saw your blog post listed on a friend's blog and the post title drew me in.

Slice 1/4-inch thin lengthwise (not rounds)...drizzle with olive oil and sprinkle with lemon pepper. Grill.

coat it with olive oil and sprinkle some garlic on it - then grill it. oh YUM!! all 4 of my kids will eat it.

also definitely blend it into pancakes. you would never know it was in there but it adds a yummy taste!
