Very, Very Yummy Sweet Potato Casserole--Even if you don't like sweet potatoes

Not the actual picture since I haven't made it yet, but as close as I could find on google.
This one has walnuts and my recipe calls for pecans.

A year ago we had dinner at the mission president's home here in Phoenix and they served a very delicious sweet potato casserole. I wanted to get that recipe all year, and last Friday I once again had dinner at their house and was finally able to get it. And proof of how good it is--there was another woman at the dinner who had been there last year who was asking for it as well!

So --here is the long awaited recipe, just in time for your Thanksgiving feast. Even those who don't like sweet potatoes will like this--as long as they do like coconut and pecans. :-)

Debra Beck's Sweet Potato Casserole

6 cups cooked and diced sweet potatoes
l Cup sugar
1/4 cup milk
2 eggs (lightly beaten)
1/2 cup butter (s0ftened)
1 cup grated coconut
1 TBS. vanilla

Topping:
1 cup chopped pecans
1 cup brown sugar
1/2 cup flour
1/2 cup melted butter
Combine sweet potatoes, sugar, milk, eggs, butter, coconut and vanilla
mix well and pour into baking dish. Combine topping ingredients &
sprinkle on top of sweet potato mixture.

Bake 350 - 30 minutes
10-12 servings
Enjoy!!!

that sounds VERY good. I'm excited to try it and since my family seems somewhat afraid of sweet potatoes, I'll try it when my parents are here. They like s.p. and somehow love anything I cook.

Looks yummy. I will definatley try it. Yams are my favorite part of Thanksgiving dinner.

About Lauren- I'm not sure how serious it is. He has liked her since the start of school. She has decided to be his girl friend recently which is significant because she never wanted to have one before. She says she feels very comfortable with him....We heard that ring by spring phrase too and laughed about it. Now its not so funny.

Where have you been all my life with such deliciousness! I love your Book of Mormon analogies, LOVE THEM!! Truly, what a great joy to be able to meet you through the blog world and know that there are lots of people out there that think like I do!

To answer some of your questions: 1. No my pantry, closets and drawers are not always that clean. We had a rough week last week and cleaning is my therapy. Plus, I love a clean home, gives me the giggles.
2. My husband received a new calling on Sunday as 1st Counselor in the Stake YM's Presidency. He was the secretary before, but they broke up the band because the 1st counselor was called to a Bishopric and the 2nd counselor was called to High Priests. We now have twinner callings and I think it is wonderful!!

I love sweet potatoes/yams. They are my favorite part of Thanksgiving dinner. I will have to give these a try. They sound great, but I might have to add some marshmallows to them.:-)

This has me intrigued because I am not at all a fan of sweet potatoes. My husband does like them though so maybe I will make this and then give it a try myself.

Oh yes, we love that casarole. We have had it for Thanksgiving for the last few years, Cairen makes it. I got to spend a minute with Camille and cute Carly a few days ago! Camille looks beautifula and Carly is really growing!
